Making cakes at home is a tricky business, especially for novice cooks. Sometimes, even with a well-baked sponge cake, the whole cake idea fails for lack of high-quality and tasty cream. The simplest, and at the same time very tasty, cream is sour cream.

Step 1
Buy sour cream with a fat content of at least 20%. Take a saucepan, place a fine sieve on top or put a thick towel. Put the required amount of sour cream on a sieve or towel. Leave the pot of sour cream in the refrigerator overnight. This process is necessary when preparing a cream. It removes excess liquid from sour cream. The plummet of sour cream affects the quality and consistency of the finished cream.
Step 2
Remove the sour cream from the refrigerator; it should be firm and the liquid remains in the saucepan. Liquid is nothing more than whey, which can later be used for pancakes and other baked goods.
Step 3
Grind the sugar to a powder. This can be done in several ways. For example, using a coffee grinder or blender. If they are absent, you pour sugar onto the confectionery paper, put another layer on top of it and roll it out with a rolling pin several times. You can also use a mortar and pestle, but this will make the process more time consuming.
Step 4
Combine sour cream and sugar. Use a mixer for best results. Add the icing sugar to the cream gradually. The ideal way to finish whipping the cream is a non-liquid consistency that will stand in a bowl (like a well-whipped egg white). Be careful when using homemade sour cream in your cream. Beating vigorously will turn into butter.
Step 5
Spread the cream on the layers of the cake, after soaking it. This cream can also be used to decorate a cake, for example, using a pastry syringe.
Step 6
Diversify your cream. Add vanillin to it for a delicate aroma. Alternatively, chop the fruit or berries and add to the whipped cream. For example, strawberries, cherries are great for this recipe.
