Delicious and aromatic bread can be baked not only in a Russian oven or bread maker, but also in a conventional oven. Baking homemade bread is not too difficult and is quite affordable for beginners. It is only necessary to strictly adhere to the sequence of operations and observe the temperature regime.

Step 1
Sift flour. For starter, combine flour, yeast, salt and warm water or whey. The temperature of the water or whey should not outweigh 40 °, otherwise it will kill the leaven. Leave the starter to ferment for a couple of hours. Then add the rest of the flour and knead the dough. If you are baking bread from wheat flour, knead the dough thoroughly, for 20 minutes by hand, or 7-10 minutes in a food processor. It is not necessary to knead the dough from rye flour for a long time, such flour does not form gluten, it is enough to mix the dough and put it to rest.
Step 2
When the dough comes up, remember it a little and divide it into two parts. Place in oiled tall tins and let rise. Place in the oven for 10 minutes at 180 °, then increase the temperature to 200-250 °. Bake the bread for 30-40 minutes. Do not open the oven during baking, otherwise the quality of the bread may deteriorate. To check the doneness, tap on the bottom of the bread - there should be a sound as if the inside is empty.
Step 3
If you want a shiny crust, lightly sprinkle the bread with water and cool on a wire rack with a towel. If you want a soft crust, immediately after baking, cover the bread with a damp towel for 20 minutes.
Step 4
Wheat bread is especially tasty when fresh, and rye bread the next day. Store homemade bread in the bread bin, not in the refrigerator. You can put the cooled bread in a plastic bag and put it in the freezer. When thawed, it will be as fresh. It is convenient to freeze sliced bread - the slices thaw very quickly. You can also defrost the food in the microwave or oven. Place frozen slices or buns in a cold oven, turn it on at 170 ° and heat for 10-12 minutes - the bread will be crispy and fresh.
Step 5
Once you have mastered the basic recipe, you can start experimenting. Fry a couple of onions and add to the dough for onion bread. You can sprinkle with caraway seeds, sesame seeds, or fried seeds on top. If you put frozen butter and garlic inside the bread just before baking, you get a delicious garlic bread.
