Sushi is prepared independently, consumed in various establishments and ordered at home. There are quite a lot of sushi varieties. The most popular, familiar and easy-to-prepare form is khosomaki - small rolls with rice and filling, wrapped in a nori seaweed sheet. Their diameter is approximately 2-3 centimeters.

Another common variety is futomaki, made by analogy with hosomaki, but having a five-centimeter diameter and several fillings. Uramaki are “rolls inside out”: they are rolled up so that the rice is on the outside and the noria leaf is on the inside. Rolls in the form of a cone made of noria filled with rice and filling are called temaki.

Nigiri or nigirizushi is a sushi in the form of a small lump of rice with a piece of fish, sometimes attached with a thin strip of nori. Gunkans or gunkanmaki are a form of sushi without rice, in the form of a filling wrapped in nori. Oshizushi is a flat, square sushi made by pressing rice and filling with a special tool: a wooden osabiko mold. Sushi is formed and then cut into portions.

Inarizushi is a type of sushi in which the filling is placed in a special bag made of fried tofu cheese or tomago omelette. Tyakinzushi are rolls that are wrapped in an omelet directly during its preparation. Typically triangular or envelope-shaped.

Kahinohadzsushi is a type of sushi in which rice and filling are wrapped in a persimmon leaf. There are several varieties of the so-called "scattered" sushi or chirashizushi. The traditional version of the dish is a bowl of rice with toppings sprinkled on top of it. Edome tirashizushi is a type of sprinkled sushi with a raw filling. Gomokuzushi is a sprinkled sushi in which the filling is mixed with the rice rather than stacked on top of it.
