In the kitchen, sort the mushrooms by varieties and by the method of their processing, throw out those in the edibility of which you doubt. Arrange in different piles those that you plan to dry, fry, boil. You should know that mushrooms are a rather quickly perishable product, so they need to be cooked as soon as possible, preferably within 3-4 hours.

Please also note that some types of mushrooms contain rapidly oxidizing substances, due to which, when kept in a warm room for a long time, the mushrooms darken and take on an unattractive appearance (for example, redheads). Therefore, it is better to put the basket with the "catch" in a well-ventilated room or immediately lower the mushrooms in slightly salted cool water (instead of salt, you can add citric acid).

For russula and butter, remove the skin from the cap, it is removed quite easily. In mushrooms with a tubular cap, it is better to remove this part of it.

After the mushrooms have been sorted out, you need to rinse them, but this should be done quickly. It is best to use a colander for this, put the product in it and substitute it under a stream of cold water. Leave the mushrooms for a while so that excess water glass, and chop for further cooking. Do not rinse those mushrooms that you will dry, just shake off all the debris from them with a brush and cut them into pieces of the desired size.
