Agar agar, or simply agar, is a vegetable substitute for gelatin. This seaweed product is almost tasteless and is a very healthy supplement providing iodine, calcium and iron. Since agar does not have a distinct flavor, it goes well with both sweet and savory foods.

Step 1

Make agar-agar jelly that can be served as a refreshing dessert or as a snack. To do this, mix 2 cups water and 1/4 cup agar flakes in a small saucepan. Simmer for about 5 minutes until the agar is completely dissolved. Then pour the mixture into a mold, cool to room temperature and refrigerate until it solidifies.

Step 2

Add fruits and nuts to the agar. Dissolve agar agar in water, mix it with nuts and fresh or canned fruit. To make the jelly in layers, pour some of the dissolved agar into a mold, let it set for a while, then put the fruits and nuts on top, cover again with the agar and let it set. Repeat layers as many times as necessary. Chill the jelly and refrigerate overnight to solidify.

Step 3

Prepare an agar pudding with tofu and / or yogurt. To do this, first dissolve the agar in the liquid. Whisk the tofu, yogurt and sugar together (without it), and add vanilla extract or lemon juice if desired. Combine the prepared mixture with the dissolved agar, and mix everything thoroughly until smooth. Refrigerate before serving.

Step 4

Make unsweetened mousse. Dissolve agar in soy milk or broth and add the following instead of sweet ingredients: ground cashews, cloves, tahini, and lemon juice. The finished mousse must be cooled before use.

Step 5

Experiment with a traditional jellied dish. Prepare vegetable broth. Dissolve the agar in it and add the finely chopped vegetables from which the broth was prepared. Use whatever vegetables you like. Pour the jellied into molds, cool at room temperature and refrigerate until it solidifies. Serve ready-made aspic on salad leaves.

Step 6

Use agar agar as a garnish. Dissolve it in a little water, mix with orange juice and cool in a saucepan of such a diameter that the jelly is no more than 1 cm thick. Cut the frozen jelly into cubes and serve as a garnish with vegetables.
