Ingredients:

  • 4 young zucchini;
  • 200 g ham (can be replaced with not too fatty bacon);
  • 1 medium onion;
  • 1 lemon;
  • 1 clove of garlic;
  • a few leaves of fresh thyme;
  • olive oil;
  • freshly ground black pepper;
  • salt;
  • a handful of crushed bread crumbs or fresh bread crumbs.

Wash the zucchini, cut into halves across, select the pulp. Boil the resulting cups in hot salted water until half cooked, put in a colander and let the water drain.

Chop the onion, fry in heated olive oil until transparent. Cut the ham into strips, add to the onion, stir and heat for a couple of minutes. Add garlic passed through a press and crushed crackers to the pan, fry for another 2 minutes.

Put thyme leaves in a frying pan, add lemon juice, freshly ground pepper, salt. Mix everything. Fill the zucchini halves with the resulting minced meat. Place the stuffed vegetables in a mold lightly greased with olive oil. Bake in an oven preheated to 200 degrees until golden brown. Serve with fresh white bread and dry wine.

The dish looks very nice and is perfect for a festive table. Any mince will do: pork, beef, chicken, mixed. From the specified number of products, 6 servings will be obtained.

Ingredients:

  • 500 g minced meat;
  • 3 zucchini;
  • 1 onion;
  • 0, 5 tbsp. dry white wine;
  • 150 g semi-hard cheese;
  • 3 tbsp. l. bread crumbs;
  • olive oil;
  • fresh parsley;
  • salt;
  • freshly ground black pepper.

Peel the onion, chop into thin rings, fry in hot olive oil until crisp. Add minced meat to the onion, fry, breaking the lumps with a wooden spatula, pour in the wine and wait until it evaporates.

Add freshly ground black pepper, bread crumbs, cheese, cut into small cubes to the minced meat. Add chopped parsley.

Cut the zucchini lengthwise, cut out the pulp, giving the halves of the vegetables the shape of boats. Fry the zucchini in a pan until golden brown. Remove on a paper towel, which will absorb excess oil, cool slightly, stuff with minced meat.

Grease the refractory mold with oil, pour in some hot water. Lay the zucchini boats, cover the mold with foil and place in the oven heated to 200 degrees. After 20 minutes, remove the baked vegetables, place on preheated plates and serve. The dish can be accompanied by homemade tomato sauce and fresh vegetable salad.

Zucchini with cheese and tomatoes: step-by-step preparation

A simple recipe for vegetarians. Feta cheese will add calories, carbohydrates and proteins. The dish is delicious hot and cold, it can be used as a side dish for fried meat or fish.

Ingredients:

  • 2 young zucchini;
  • 1 large fleshy tomato;
  • 150 g feta cheese (can be replaced with another brine cheese);
  • 0.5 cups bread crumbs;
  • fresh herbs (parsley, dill, celery);
  • salt;
  • freshly ground black pepper.

Grease the refractory mold with vegetable oil. Wash the zucchini, dry it, cut into circles and put in a mold in several layers. Cut the tomato, pour over with boiling water, remove the skin. Chop the pulp into cubes, pour them into the mold in an even layer. In a separate bowl, combine vegetable oil, salt, pepper and chopped herbs, pour the resulting sauce over the vegetables.

Put the dish in the oven, preheated to 180 degrees, bake for 20 minutes. Remove the dish from the oven, sprinkle with breadcrumbs and cubes of feta cheese, return to the oven and cook for another 30 minutes.

A very delicate dish that should be served as a side dish. The proportions of seasonings are calculated according to taste; fresh herbs can be replaced with dried ones.

Ingredients:

  • 1 large zucchini;
  • 2 tbsp. l. wheat flour;
  • 2 tbsp. l. olive oil;
  • 50 ml heavy cream;
  • 2 tbsp. l. freshly squeezed lemon or orange juice;
  • 50 g semi-hard cheese;
  • salt;
  • freshly ground black pepper;
  • fresh herbs (parsley, celery, basil);
  • a pinch of nutmeg.

Wash the zucchini, dry it, cut into circles. If the vegetable is young, the peel can be left, it is better to peel the mature zucchini. Salt and pepper the circles, roll in flour (1 tablespoon), fry in hot olive oil until golden brown.

In a separate container, mix the cream, the remaining flour, chopped herbs, add a little salt and pepper. The sauce should be thick enough without any lumps. Place the zucchini in a fireproof dish, pour over the creamy sauce and sprinkle with nutmeg. Bake for 10 minutes in an oven preheated to 200 degrees. Then take out the mold, sprinkle the vegetables with lemon or orange juice, cover with grated grill and put in the oven again to melt the cheese. The grill can be turned on for 1 minute to create a golden brown crust. Serve the zucchini directly in the dish.

  • ground black pepper.

Chop the zucchini and onion thinly. Grate cheese on a coarse grater. Mix flour, salt and pepper. Beat eggs with milk in a separate container, add flour and spices in portions, without stopping stirring. Pour in 2 tbsp. l. vegetable oil, add mustard and grated cheese, grind until smooth.

Put the zucchini slices in the batter and mix. Put the mass in a rectangular shape, smooth out. Bake for 40 minutes in an oven preheated to 200 degrees. Cut into slices right in the mold before serving. The casserole can be a side dish for meat, sausages, fish.
