In modern life, people are so accustomed to the presence of sugar on their table that they practically do not notice the possibilities of replacing it, although everyone has heard that sugar is the “white death”. But even a couple of centuries ago sugar was not at all a common product, it was brought from overseas countries, and it was available only for the most elite.

It is necessary

  • - 0.5 kg of rose petals;
  • - 1 kg of honey;
  • - juice of 1 lemon;
  • - 1 glass of water

Instructions

Step 1

Surprisingly, in ancient times, granulated sugar was really a great luxury, but honey was considered an affordable product. It was eaten by many people, diluted with water, and various drinks were made on its basis, for example, sbiten and kvass. Today the situation has changed dramatically. Honey in modern life is a valuable medicinal product. Perhaps only a few out of hundreds of people prepare homemade drinks on its basis, let alone jam … Honey jam is a rarity these days.

Step 2

Honey jam compares favorably with its sugar counterpart in a number of properties, and above all - in taste and aroma. In addition, such a product is more nutritious, saturated with many useful substances, and has healing properties. In the old days, honey jam was made mainly from wild berries, which everyone could pick up in the nearest forest. Cooking such a wonderful jam is not much different from the usual one. It's just that honey is used instead of sugar - that's the whole secret.

Step 3

If you decide to try making honey jam, then you should use only light varieties of honey, for example, lime. You will be pleasantly surprised, because the berries, cooked in honey, acquire a brighter color, while retaining their original appearance and juiciness. If you use dark honey, then the berries can be transferred to its too rich aroma, while they can lose their true taste. One thing you shouldn't worry about when making honey jam is the shelf life. The fact is that this wonderful product may not deteriorate for an indefinitely long period of time.

Step 4

There are many recipes for honey jam, but perhaps one of the most exquisite of these delicacies is rose petal jam. The main thing is to stock up on a large number of petals. They need to be finely chopped, for this it is convenient to use a blender, because the petals are very delicate, and you can easily chop them. After that, take half of the required amount of honey (it depends on the volume of the petals), combine it with the fragrant mass and let the resulting mixture brew for two days.

Step 5

Use the remaining honey to prepare the syrup. Add already soaked petals and a little lemon juice to it. All this must be patiently cooked over low heat until your gourmet jam thickens. Now the fragrant delicacy should be placed in beautiful jars and tightly closed with lids.
