The abundance of goods on the shelves of stores and hypermarkets is surprising, confusing, and sometimes dead end. You can stand near the shelf, say, with condensed milk for at least half an hour, looking at cute cows on the labels, reading information about manufacturers, comparing the composition and ingredients.
I remember that in childhood there was one brand of condensed milk, one composition - milk and sugar. What is it now? Now, on almost any label, you can easily read, "made according to GOST". The question is, does the sweet content of the can really match it, are there any "secret" ingredients?
Remembering how our grandmothers and great-grandmothers cooked absolutely everything at home, I want to cook condensed milk ourselves.
How to cook condensed milk?
In fact, there are many recipes. The main ingredients are milk and sugar, you can buy them at any store. So:
- milk - 0.5 liters
- sugar - 250 grams
Let's move on to the cooking process.
Pour milk into a saucepan, add sugar, stir slowly with a whisk. After the sugar has completely dissolved, put the pan with the sweet content on the stove. Boil the future condensed milk over low heat, stirring constantly. The cooking process can take from an hour to one and a half. The resulting mixture should be viscous. If it is necessary to leave, it is better to remove from heat, this way, you will prevent burning.
You can also cook condensed milk in a water bath.
- To do this, you need two pots. One is large, the other is smaller. The cooking pot should be thick-walled, not enamelled. The ingredients are the same: milk and sugar. In principle, cream or milk powder can be used instead of milk.
- Place a large pot of water on the stove. In a small saucepan, combine milk and sugar. Once the water in the large saucepan is boiling, place the small one with the mixed ingredients on it.
- You need to cook, stirring occasionally. In this way, you need to cook condensed milk until the milk thickens. Make sure that the water does not evaporate, top up if necessary. If there is a need to rush, do not increase the heat, the milk may burn, and condensed milk will not work. Better remove from heat. Resume the process when you are free. Milk will thicken faster if, say, you put in the amount of sugar twice the specified norm - 400-500 grams.
