It is necessary

    • For the test:
    • flour - 1 kg,
    • yeast - 1 sachet,
    • sugar - 150 g,
    • salt - 1 tsp (no slide),
    • milk - 2 tbsp,
    • margarine - 50 g,
    • egg - 1 pc.
    • For filling:
    • lemons - 2 pcs,
    • sugar - 150-200 g,
    • starch - 1 tbsp. spoon (with a slide).
    • For coating:
    • one egg yolk.

Instructions

Step 1

Make a tough dough. To do this, pour the yeast into a glass, add a teaspoon of sugar, cover with lukewarm (but not hot) water, stir and let stand for ten minutes. When this yeast begins to ferment and the mixture forms a thick foam, add salt and stir until completely dissolved. Mash the sugar and egg. Combine all the ingredients required for the dough and knead until the dough is soft and smooth. Then place the dough in a warm place to ferment.

Step 2

When the dough rises (after about an hour and a half), knead it properly. Put it back in warmth and let it rise. Then knead again.

Step 3

Give the dough the shape of a bun and roll it into a layer about 1 cm thick. The layer should be round in shape. You can leave some dough to decorate before baking.

Step 4

Fifteen minutes before you need to bake the cake, put the oven to preheat (200 degrees).

Step 5

Grate the lemons on a fine grater. Remove the seeds from the lemons before grating (otherwise the cake will be bitter).

Step 6

Then mash the lemons with sugar, add the starch and mix the mixture thoroughly

Step 7

Spread the resulting filling evenly on the dough, leaving 3 cm from the edge.

Step 8

Fold the edges without filling so that they cover the filling on top. You can press the edges of the cake with a fork, then you get a kind of pattern.

Step 9

Now separate the white from the yolk (break the egg so that you get two identical halves of the shell and pour the egg from one to the other). Roll out a small rectangle from a piece of dough (the thickness of the dough should not be more than 5 mm) and make small cuts on the sides. Place a cute leaf on top of the cake. Spread the yolk over the lemon pie and place in the preheated oven.

Step 10

Bake the pie at 200 degrees until golden brown.

Bon Appetit!
