Various seasonings allow you to radically change the usual taste, add spice, soften harsh notes, highlight some accents and remove others. Not all are considered useful, including liquid smoke, which is practically withdrawn from the market. However, you can create its effect at home.

Step 1
Please note that real liquid smoke cannot be made at home. Its production is based on the purification of smoke in an aqueous solution, which allows it to get rid of all harmful products of decay - ash, tar, carcinogens. For this, the smoke is first condensed and separated into three fractions, purified and physically processed. In some countries, this flavoring agent, allowing to achieve the smoked effect of meat products, is prohibited for sale, as it contains a large amount of harmful additives.
Step 2
Modify the flavor of liquid smoke a bit and use a simple marinade recipe. For example, a mixture of mayonnaise, curry, garlic and soy sauce provides a similar effect. This will give the chicken or other dish a moderately spicy, piquant taste. Depending on the proportion of ingredients, you can make almost different dishes. Marinate the chicken in the meat for at least a few hours, and it will be juicy and tender.
Step 3
Find special smoked salt in stores - it almost completely mimics the effect that liquid smoke provides. Use it directly during cooking so that the dish has time to soak in it, absorb the aroma and acquire a smoky taste. The only difference from liquid smoke is that the appearance of your meat will not change.
Step 4
Use the recipe for the smoked mix. To do this, you will need raw rice, green or black tea, and some sugar. Wrap the mixed ingredients in two layers of foil and pierce it several times with a fork. Place the meat on top of it and place everything in a skillet under the lid. Simmer for a minute over high heat and then cook over low heat until tender. Please note that this produces smoke, so it is better to ventilate the kitchen.
