To make culinary masterpieces or calculate the calorie content of a dish, sometimes you need to know how much a chicken egg weighs, or any of its components. You can do this even if you do not have scales at hand.

Average weight of one chicken egg

Chicken eggs can vary greatly in size and weight - the smallest eggs laid by young chickens may "fall short" and up to 40 grams, and especially large "specimens" weigh more than a hundred. Therefore, eggs, depending on their size, are divided into categories, which are indicated by a number or letter directly on the shell - or on the product packaging.

All eggs of the same category are approximately the same in size, their weight fluctuates very slightly and deviations up or down do not exceed 5 grams. Therefore, knowing it, you can easily determine the "estimated" average weight of a chicken egg:

  • eggs of the third category (designation C3 or D3) - 40 grams;
  • the second category (C2 or D2) - 50 grams;
  • the first category of chicken eggs (C1, D1) - 60 grams;
  • selected (marking with letters SO, DO) - 70 grams;
  • the highest category (VO, DO) - 80 grams.

How much does a boiled egg weigh

Regardless of the category of eggs, the proportions according to which the weight is distributed between the shell, yolk and white are approximately the same:

  • the proportion of shells in the total weight of a chicken egg is 12%;
  • the weight of the yolk is about a third of the total weight of the egg (32%);
  • protein accounts for the largest proportion of weight - 56%.

Accordingly, the weight of an egg without shell is 88% of the total weight. And, since during cooking the shell acts as a protective cocoon, water does not penetrate inside, and nutrients are not digested - the weight of the egg remains unchanged.

Thus, the approximate weight of one boiled egg, excluding the shell, will be:

  • Category 3 - 35 grams;
  • Category 2 - 44 grams;
  • Category 1 - 53 grams;
  • Selected - 62 grams,
  • The highest category is 70 grams.

How much does egg white weigh

Since protein is the most "weighty" part of an egg, it is especially important to take into account the category when calculating its weight, because the largest selected eggs will have twice the protein weight in comparison with the product of the third category. Accordingly, if the dish requires exact proportions, and the diet requires strict adherence to calorie intake, the error may be too large.

The average weight of chicken protein is:

  • 23 grams - for the third category,
  • 29 grams - for the second;
  • 34 grams - for the first,
  • 40 grams - for the perfect,
  • 46 grams - for the highest.

Regardless of whether we are talking about a boiled egg, or about raw, the weight of the yolk will be approximately the same and will be:

  • 12 grams - for chicken eggs of the 3rd category;
  • 16 grams - for category 2;
  • 19 grams - for eggs of the 1st category;
  • 22 grams - for selected products;
  • 25 grams - for the largest eggs of the highest category.
