    • 2 ½ cups flour
    • 3 large fresh chicken eggs
    • Water
    • Salt
    • Powder flour
    • Pure linen cloth (towel)
    • Wide and deep bowl
    • Large wooden board
    • Fork
    • Pasta machine or rolling pin

Step 1

For lasagna or pasta dough, not any flour is suitable, but only from durum wheat (durum, semolina). Combine the flour and salt and sift it into a bowl so that it forms a tall "mound". Make a groove on top of this "hill" for the eggs.

Step 2

You can break eggs directly into flour, but to avoid a situation where one spoiled egg spoils all food, it is better to use two separate bowls for this. If you choose to cook the dough only on the yolks, the taste and color of the final product will only benefit from this. In this case, you will need twice as many eggs.

Step 3

Pour the egg mixture into the flour and begin gently kneading the dough with a fork. Continue until the flour has completely absorbed the eggs.

Step 4

You can never say exactly how much water you need for the dough, because it is not known exactly how much water that particular flour that you have chosen is ready to absorb. Add water a little at a time. The dough should be neither too dry nor too sticky.

Sprinkle flour on a cutting board, lay out the dough and start kneading it with your hands. It will take you about five minutes for the dough to turn into an even, smooth, elastic ball.

Cover the dough with a damp cloth and let sit for 15-20 minutes.

Step 9

Begin to lower the dough thickness regulator to a smaller mark. Roll the layer at the 6th mark, fold it in half and roll it at the 5th mark and so on until you reach the very last mark. You will have a long and thin layer of dough.

Step 10

Place the sheet on a lightly floured surface, “dust” it with flour and do all the rolling operations with the remaining three pieces of dough.
