White tea is harvested in early spring, because it should be especially tender, while collecting only a bud with two top leaves. For some teas, only a kidney covered with white hair is taken. The collected buds and leaves are briefly dried in the sun, and then immediately dried. Such a seemingly simple method of processing in practice requires great skill and a special mental attitude of the person working with tea.

It is very important to observe the temperature regime during fermentation - a low temperature will make the tea bland, and too high will not reveal the surprisingly delicate taste of white tea. It is recommended to brew white tea no more than three times, while the water temperature should not exceed 80-85 ° C. When brewing, you can use a gaiwan with a fine china lid or a glass teapot. These dishes quickly release heat, which allows the delicate taste to unfold smoothly.

It is not recommended to use an earthenware teapot. it keeps warm well and can make tea strong, while the infusion will lose its tenderness. It is better not to make the tea strong, but to brew it weaker, withstanding the infusion for no more than one minute and pour it immediately into cups in order to feel all its subtleties.

It is better to drink white tea in summer, it cools and relaxes well, lowers blood pressure a little. At the first brewing, the infusion will be very delicate, transparent, almost tasteless, leaving a silky taste, the second will reveal floral notes, the third will be more mature with a rich taste.
