Ingredients for the cake:

  • 500 g turkey liver;
  • 250 g smoked brisket;
  • 100 g buckwheat flour;
  • 250 g wheat flour;
  • 250 ml whey or milk;
  • 250 g mayonnaise;
  • 3 eggs;
  • 3 small onions;
  • 1 sweet pepper (red);
  • 1 bag of buckwheat;
  • 3 onion feathers;
  • 1 teaspoon baking powder
  • 1 tablespoon of sunflower oil;
  • salt.

Preparation:

  1. Boil buckwheat in a bag until tender, without adding salt, remove and cool.
  2. Peel the turkey liver from films, wash and cut into small pieces. Cut the brisket in the same way as the liver.
  3. Peel, wash and finely chop onion feathers, white onions and bell peppers without joining together.
  4. Pour some oil into a frying pan and heat it up. Put pieces of brisket in hot oil and fry until fat with a smoked flavor is released. This fat is needed so that all other ingredients gain its delicate taste and aroma.
  5. Then add pieces of red pepper and white onion to the brisket. Stir the contents of the pan and fry for another 5-7 minutes until the vegetables are soft.
  6. After this time, add pieces of liver and chopped onion feathers to fried vegetables with brisket. Mix again and fry for 1-2 minutes over high heat. During this time, the liver, of course, will not be fried, but it will grab a little. And this is exactly what you need.
  7. After a couple of minutes, salt the contents of the pan, stir and remove from heat.
  8. Combine the eggs with a pinch of salt and beat with a mixer to a cool white foam.
  9. Then pour the whey and mayonnaise into the foam, beat everything again. Then add buckwheat flour, stir in with a mixer and leave for a while to swell.
  10. As soon as the buckwheat flour swells, you need to introduce wheat flour along with baking powder in small portions, without ceasing to mix everything. The finished dough should be similar in density to sour cream.
  11. At the end of kneading, pour boiled buckwheat into the dough, mix everything again and divide into two equal parts.
  12. Pour one part of the dough into the bottom of a silicone baking dish. Put all the filling on the dough, smooth it and pour the second part of the dough.
  13. Formed buckwheat pie is sent to the oven for 45-50 minutes, preheated to 180 degrees.
  14. After this time, remove the baked pie from the oven, cool, cut and serve.
