One solution to how you can stock up on cherries for the winter is to cook them in syrup. This method is not only very simple, but also allows you to preserve all the benefits of vitamins.
It is necessary
- - cherry - 1, 1 kg (weight with seeds) or 1 kg (weight without seeds);
- - sugar - 0.4 kg;
- - boiled water - 250 ml;
- - 250 ml jars - 5 pcs. + 5 covers;
- - towel;
- - a bowl or saucepan.
Instructions
Step 1
Rinse the cherries under running water and remove all the seeds. For convenience, you can use a hairpin or a special mechanical device. It is imperative to take out the seeds for a number of reasons: due to their presence, toxic hydrocyanic acid can form, the preparation in the jar is stored longer without them, and it is much more pleasant to eat pies with cherries, for example, without seeds. Therefore, we must remove and discard the bones.
Step 2
Prepare jars and lids. They do not need to be sterilized. It will be enough just to rinse thoroughly in hot water and soap and dry. Fill the jars with cherries to the top. Take a bowl or wide saucepan and line the bottom with a towel, then transfer the filled jars there.
Step 3
Now let's prepare the syrup. Pour water into a separate saucepan. According to the prescription, you need to take 400 ml of water. But if, in the process of extracting the seeds, the cherry gave juice, then part of the water can be replaced with it, which will be even better. Add sugar and place on the stove. While stirring, bring to a boil. As soon as the water boils and the sugar dissolves, remove the foam and remove the syrup from the stove.
Step 4
Pour the preparations with cherries with the prepared hot syrup, and then cover the jars with lids. Now pour hot water into a bowl with cans so that the water does not reach the lid a little (2-3 cm below the edge) and bring to a boil. Thus, it is necessary to sterilize the workpieces in boiling water for 10-12 minutes.
Step 5
After the time has passed, carefully remove the hot cans from the basin, roll up the lids and put them upside down in a safe place. For additional sterilization, wrap the jars with a terry towel. Such homemade cherries can be stored at room temperature, out of direct sunlight.
