But it is still not worth giving up the main dishes completely, because you can use their summer options. For example, cook dumplings not with potatoes, but with cherries.

    • eggs 2 pcs.;
    • water 0.5 tbsp.;
    • salt;
    • cherry 500 g;
    • sugar 0.5 tbsp.;
    • semolina 1, 5 tablespoons

Step 1

Knead the dumplings dough. Sift a glass of flour through a fine sieve. This will saturate it with oxygen and make the dough more tender.

Step 2

Pour the flour into a large bowl, make a depression in the center of the slide. Whisk two eggs in a separate bowl. Pour them into flour, add salt to taste and gradually pour in half a glass of water, kneading the dough with your free hand. In consistency, it should turn out to be cool and elastic. When the dough stops sticking to your hands, cover it with a napkin and leave for 20-30 minutes.

Prepare the filling at this time. Sort the cherries, remove the seeds from them. Put the berries in a plate and cover with sugar - for a pound of cherries, about half a glass of sugar. When juice appears, drain it into a separate container.

Step 4

The main difficulty in preparing such dumplings is the appearance of juice in the filling, due to which the dough can unstick. To avoid this, add semolina or corn starch to the berries along with sugar - 1, 5-2 tablespoons per 500 g of cherries. If there is no semolina, you can put the cherries, already peeled and juiced, in the freezer. It will be much more convenient to work with frozen berries.

Step 5

Roll out the dumplings dough into a layer 3 mm thick. Cut it into circles with a glass. Add about a teaspoon of the filling to each circle - there should not be too much of it, otherwise the dumpling will break apart during cooking. Each circle is folded in half and fastened at the edges. To make the edges of the dumpling stick better, you can grease them with a beaten egg.

Step 6

Boil the stapled dumplings in salted water for 6-8 minutes. Serve them hot, dripping with the left cherry juice mixed with sour cream.
