After the onset of spring, pickles are replaced by fresh vegetables. Radish is one of the first to appear on the shelves. It is served solo, and various snacks are prepared from it. For example, a radish salad with herbs can be a wonderful addition to most meals. Such a salad turns out to be not only very light, but also rich in vitamins, which are very necessary after winter.

- - sour cream - 150 ml (can be replaced with yogurt or kefir);

In order to prepare this light spring salad, first of all take a radish, cut off the tops and tails. Rinse the vegetable under running water, pour over boiling water and cool. Then cut the radishes in half, chop thinly in a semicircle shape and transfer to a salad bowl. If the vegetable is small, then it can be cut into circles, cubes or strips.

You can take any fresh herbs to taste, for example, green onions and dill. Chop it with a knife and add to the radishes. Pour in sour cream (you can replace it with yogurt or kefir). Add salt, a few pinches of ground black pepper and mix well. You can decorate such a salad with a sprig of cilantro or figuratively carved radishes.

Remove the tails and tops from the radishes and rinse thoroughly. Then cut it in any way - circles, semicircles or straws and put in a deep plate. Add to it finely chopped any fresh herbs, salt and black pepper if desired, as well as a little olive oil. Stir everything together and serve immediately.

Such fresh radish salads can be offered to almost any first and second. But they are best suited to fatty dishes, such as pilaf, fried potatoes, meat, and so on.
