Harvesting the first harvest of young green onions means spring has arrived. That is why the pie with green onions and eggs was nicknamed "Spring". But it can be baked all year round, because the filling products are always available in the store. The beauty of baking is the lack of yeast. The dough is prepared with kefir and turns out to be very light.
Ingredients for Spring Jellied Pie
- flour (you can take rye) - 260 g;
- kefir of any fat content - 400 ml;
- chicken eggs - 7 pcs.;
- green onions - 2 bunches;
- baking powder - 1 tsp. or soda - 0.5 tsp;
- sesame seeds for decoration - optional;
- salt;
- ground black pepper;
- butter - 5 g;
- baking dish.
Step-by-step cooking recipe
The dough for the "Spring" jellied pie is prepared very quickly, so it will be more convenient to start with the filling. First, take 5 chicken eggs and dip them into a pot of cold, salted water. To prevent them from cracking during cooking, remove them from the refrigerator in advance and keep them at room temperature. After boiling, cook them for 8-10 minutes. Then cool in cold running water, and then peel and cut into small cubes or strips. You can also grate them on a coarse grater. Rinse and chop green onions.
Now you can start making the dough. Break the remaining eggs into a deep bowl, add half a teaspoon of salt and beat until foamy, either with a whisk or with a mixer. After that, pour in kefir. You can take it from the refrigerator. But the dough will turn out to be softer, more airy and will rise better if the kefir is at room temperature. Then put in the baking powder (or baking soda) and mix everything together well until smooth. Leave the resulting mass for 5-10 minutes so that the kefir swells a little.
It was the turn of the flour. First, sift it through a sieve, and then add to the mixture in portions. Mix everything together so that no flour lumps remain. The dough is ready. Its consistency should resemble not very thick sour cream.
To finish the filling, combine chopped eggs with chopped green onions in a bowl. Add a few pinches of salt and black pepper.
Baking a pie in the oven
Turn on the oven and set the temperature to 180 degrees. In the meantime, grease the baking dish with butter (you can take any other) and pour half of the kefir dough into it. Then lay out the onion and egg filling, top it with the remaining dough and, if desired, sprinkle with sesame seeds. When the oven is hot enough, send the form with the workpiece into it and bake for 40-45 minutes. Check the readiness of the cake with a match - if at the end of the time it is dry, it means that the jellied "Spring" cake can be taken out of the oven.
When the product has cooled slightly, remove it from the mold and transfer it to a dish. And then divide into portions and serve. This cake will be a wonderful addition to lunch or dinner. It can also serve as a full breakfast.
