  • - apricot jam - 3 tablespoons

Step 1

Lean chocolate cake, unlike the classic whipped egg cake, is first of all good because it does not require any fuss to prepare it.

First you need to turn on the oven - it needs to be preheated to 180 degrees Celsius.

Step 2

Then, while your oven is warming up, take your time to prepare the dough. To do this, take a wide enamel bowl and pour highly carbonated mineral water into it. Then add granulated sugar and stir with a whisk.

Now add the sifted premium wheat flour. Stir at the same time with a whisk to avoid clumping. Add cocoa powder. Choose a quality product of proven brands, otherwise, it is possible that you can ruin the cake - poor quality cocoa powder will grind on your teeth, as if fine sand was added to the dough. You can use two rounded tablespoons or three flat tablespoons.

Mix the dough thoroughly and pour in the sunflower oil. Stir the dough again with a whisk. Unlike the dough made on the basis of whipped egg whites, the lean dough on highly carbonated mineral water does not settle, but rises well during the baking process.

Take a round shape about twenty-two centimeters in diameter. You can also take a form with a diameter of 24-26 cm, but the height of the cake will turn out to be slightly less. Since the cake will be with a layer of apricot jam, the difference is not important.

It is desirable to lubricate the metal form with oil. Although the dough is quite greasy and should not stick during baking. There is no need to lubricate the silicone mold.

Since the mold with the dough is placed in a hot oven, ceramic or glass molds are not suitable, because due to the temperature shock, these products can burst.
