Step 1
We will start cooking kefir muffins by separating the protein from the yolk. Beat the protein with a mixer until foamy. Add one glass of sugar to the yolk and grind. Add one glass of kefir and mix everything until smooth. We leave it to stand for some time, until the sugar is completely dissolved.
Step 2
Melt margarine over low heat, stirring constantly and not letting it boil. After it has melted, add salt to it and mix until it is completely dissolved. Next, add two glasses of flour and mix everything well. Add the beaten protein.
Step 3
Put the yolk with kefir and sugar in the mass and mix everything well until a homogeneous mass is formed. Add another glass of flour and 1/3 teaspoon of baking soda and mix again. The consistency should resemble thick sour cream.
Step 4
Now you need to prepare the muffins, they need to be greased with vegetable oil. We fill the molds with a mass of about half, since when baking the dough will rise by about two times.
Step 5
Kefir muffins must be baked at 180 degrees for about 20-25 minutes. You can sprinkle the finished muffins with powdered sugar.
