Cupcakes take a special place among the variety of types of baked goods. Homemade muffins are always excellent - especially fresh ones straight from the oven. It is very easy and quick to prepare them, and the taste and aroma of homemade baked goods will delight you and your loved ones. Even the most fastidious sweet tooth cannot resist such a delicacy. There is a huge variety of muffins, but most often they are baked sweet with fruits and nuts, with or without fillings.

- butter or margarine - 150 g;
- sugar - 220 g;
- eggs - 5 pcs;
- raisins or candied fruits - 75 g;
- zest of one lemon;
- powdered sugar.
Instructions
Step 1
First, take your eggs and separate the whites from the yolks. In a separate bowl, beat the whites with a mixer until a stable foam forms. Then do the same with the yolks.
Step 2
Remove the butter from the refrigerator ahead of time to soften it slightly. Now grind the melted butter with sugar until fluffy. Be sure to make sure that the sugar is completely dissolved and there are no small grains left. Divide the egg yolks into three equal parts and add them in turn to the resulting mass, while remembering to stir it all the time. Then rub it white.
Step 3
Now take a lemon, rinse it thoroughly in warm water and soap and wipe it off. Then rub the zest into a fine grater and add it to the resulting mass. After that, add flour, sifted through a sieve, raisins or candied fruits there. Gently combine the mass with the whipped egg whites and mix well again.
Step 4
Prepare muffin tins. They must be perfectly clean. Melt some butter and grease the molds with it. Then sprinkle them with breadcrumbs or flour. Place the dough in them immediately and place in the preheated oven. Bake the muffins at two to two hundred and ten degrees Celsius for fifteen to twenty minutes. This time will be quite enough.
Step 5
To test if the cake is done, take a wooden stick and prick it. If the dough doesn't stick to the stick, then the muffins can be removed from the oven. But if the muffins are browned, and the inside is still raw, then they can be covered with damp parchment and left in the oven for a while.
Step 6
Free the finished muffins from the molds, put them on a nice plate and, after they have cooled, sprinkle with powdered sugar or grated chocolate on top. The muffins are delicious and crumbly. Bon Appetit!
