Filled pies are one of the most popular dishes in Russia. These dishes are different not only in shape, but also in the composition of the filling. Pies with cabbage and potatoes are a unique product that can be served both with tea and as a side dish.
It is necessary
- For dough:
- - 700 g flour;
- - 20 g of yeast;
- - 300 g of pure filtered water;
- - 10 g of salt (it is better to take fine salt);
- - 40-50 g of sugar;
- - 1 chicken egg;
- - 20 g melted butter.
- For filling:
- - 400 g of sauerkraut;
- - 4 potatoes boiled in the skin;
- - 1 onion;
- - salt;
- - vegetable oil.
Instructions
Step 1
First, knead the dough: pour 300 ml of warm water into a deep enamel pan, add 400 g of flour, 20 g of dry yeast (you can use yeast in briquettes, this cake will require 1/5 of the package), salt, sugar, wrap it well with a terry towel and put in a warm place for 1, 5-2 hours (during this time, the dough should rise at least twice).
Step 2
As soon as the dough rises, add to it the rest of the flour (300 g), an egg, butter (it must be removed from the refrigerator a couple of hours before kneading the dough so that it is soft) and knead a thick dough. Put it in a warm place for another 40 minutes (let it come up).
Step 3
Chop the onion finely, fry it together with the cabbage in vegetable oil (fry until the onion acquires a golden hue, it is unnecessary to fry it completely). Pepper and leave to cool.
Step 4
Peel the potatoes, chop finely, salt, pepper and fry them in a little vegetable oil.
Step 5
Pour a little flour on the work surface, then put the dough on it and roll it out so that its thickness is no more than 0.5 cm, and the width and length are twice the baking sheet. Cut the rolled dough into two pieces.
Step 6
Grease a baking sheet with vegetable oil, then put one part on it, form the sides. Spread the filling evenly on the dough (first the cabbage and onion, then the potato). Place the second part of the dough on top of the filling and seal the sides.
Step 7
Put a baking sheet with a pie in the oven for 40 minutes, the temperature of which is 170-180 degrees.
