Pay attention to the quality of the grains in transparent packaging: they should not stick together, the color should be pure white or translucent, but without cloudy impurities.

Step 2

In order for the rice to be crumbly, it should first be rinsed well under running cold running water. According to many culinary experts in eastern countries, where people especially revered this side dish, the grains should be washed at least 7 times: it is in this number of times that the rice becomes completely smooth, clean and without unnecessary impurities. In fact, it is quite enough to place 200-300 grams of grains in a clean bowl and rinse, filling the bowl with water to the brim, 2-3 times. As the water is poured, sort and squeeze the rice with your free hand.

Step 3

Do not rush to immediately start cooking rice, let it dry and brew for an hour. Stir it from time to time so that the grains dry well and swell slightly on all sides. Next, fill a clean saucepan with water at a ratio of 2 parts rice to 3 parts water. Boil water and add the future side dish, stirring constantly. Cover with a tight lid. Reduce heat to medium and count for 7-10 minutes.

Remove the lid and add salt to taste. Stir the rice and cook without touching for another 10 minutes. The grains should swell, but not much. Remove a sample: by this time the rice should be similar in consistency to boiled potatoes, that is, not too hard, but not too soft. Remove the pan from the heat, cover and let sit for 20 minutes.

Stir the cooked rice and check for friability. Quite a few home cooks make a mistake at this step. If you notice that the rice has not absorbed all the water and is still quite wet, do not leave it that way. Otherwise, after a while, it is the excess liquid that will make it look like gruel, but not crumbly. Try covering the pot with a clean piece of paper and letting it sit for a few minutes. The paper will absorb any excess water as it evaporates. After that, stir well this time the really crumbly rice and let it cool.
