Of all the variety of seafood, squid is perhaps the most familiar to Russian gourmets. There are countless dishes with squid: you can cook it as a snack, add it to a salad, fry it in batter … There are many options. However, for any dish, squid must be prepared. Clean it up first. This is quite simple to do.

- - frozen squid carcasses,
- - boiling water,
- - running cold water.

Step 1
When buying squid, it is better to give preference to unpeeled squids: as a rule, peeled squids have already been steamed, that is, they have been heated. When cooked, their meat can be tougher and drier than untreated squid.
Step 2
Choose squid with lilac-pink skin, preferably whole, without breaks. If the skin of the squid is brownish, cracked, torn, it means that the carcass has been defrosted and frozen back several times. It is better not to take such a product.
Step 3
Remove frozen squid carcasses from the refrigerator, put in a deep bowl, leave at room temperature for 7-10 minutes.
Step 4
Boil water, pour boiling water over the squid, hold for 1 minute and drain. The squid skin will immediately curl up.
Step 5
Rinse the outside of the squid under running cold water, removing any remaining skin with your hands.
Step 6
Remove the insides and chord from the squid - a transparent, fairly hard film that runs along the back of the squid, its spine.
Step 7
Thoroughly rinse the squid carcass again and cook further according to the recipe.
Step 8
You can store the peeled squid in the freezer, thawing them as needed.
