Blackberry compote without sterilization
Ingredients:
- chokeberry - 400-500 g;
- sugar - 500-700 g;

Blackberry jam
Ingredients:
- chokeberry - 1 kg;
- sugar - 1.5 kg.
Chokeberry is a fairly hard berry. Therefore, in order to more deeply impregnate the berries with syrup, it should first be frozen. To do this, place the washed blackberry in the freezer for 3-4 hours. When frozen, the water contained in the cells of the berries turns into ice crystals, which with sharp edges will tear apart the delicate cell walls. Through the numerous microcracks formed in this case, the syrup will penetrate into the berries when cooking the jam.
Transfer the frozen chokeberry to a prepared dish (saucepan, basin), fill it with hot syrup, bring to a boil and cook over medium heat for 12-15 minutes. Then turn off the stove, cover the jam with a lid or towel and leave for 6-8 hours. After that, cook the mountain ash for 10-15 minutes, transfer to sterilized jars, close the lids. When the jam has cooled, put it in a cool, dark place.
Blackberry tincture
Ingredients:
- chokeberry - 200 g;
- cherry leaf - 100 pcs.;
- sugar - 2 glasses;
- vodka - 700 ml;
- water 1, 5 l.
Pour rowan berries and cherry leaves with water, put on fire and cook after boiling for 15-20 minutes. Strain the broth, add sugar, pour in vodka and stir until the sugar is completely dissolved. Pour into bottles, close tight lids and store in the cold. In a month you can take it to the festive table.
Hot black chokeberry seasoning
Ingredients:
- chokeberry - 0.5 kg;
- garlic - 1 head;
- salt - 2 tsp;
- sugar - 2 tablespoons;
- table vinegar 9% - 1 tablespoon;
- ground black and red pepper, basil, coriander, cinnamon to taste.
Peel the garlic, rinse the mountain ash and mince together with the garlic or chop with a blender. Add salt and sugar, vinegar, spices and herbs to taste.
