Beans are a must-have protein in the diet of vegetarians. Making white bean soup is easy and delicious.

- Water - 3 l.;
- dry white beans - 150 gr.,
- carrots - 2 pcs.;
- onion - 1 pc.;
- bell pepper - 1 pc.;
- potatoes - 3 - 4 pcs.;
- zucchini - 1 pc.;
- tomato - 1 pc.;
- salt and spices to taste.
Instructions
Step 1
Soak white beans in warm water for 2 hours. Then drain this water. Pour cold water into a saucepan, dip the beans in it and cook over medium heat for 30 minutes. You do not need to salt the beans, otherwise they will harden.
Step 2
Dice potatoes, add to pot with beans. Grate onions and carrots on a fine grater and add to the soup.
Step 3
Peel the zucchini, tomato and bell pepper, cut into cubes, add to the soup.
Step 4
Add salt and spices.
Step 5
Cook until tender (about 20 minutes).
