White beans are a low-calorie dietary product. It is rich in vitamins of group B, C, PP and easily digestible vegetable protein containing essential amino acids: tryptophan, lysine, tyrosine, methionine, arginine. This traditional rustic dish, originally from the Italian province of Tuscany, is tasty and healthy.

It is necessary

    • tomatoes - 3 pcs.;
    • carrots - 1 pc.;
    • onion - 1 pc.;
    • garlic - 2 cloves;
    • celery - 1 bunch;
    • olive oil - 5 tablespoons;
    • dried thyme (thyme) - 0.5 tsp;
    • ground black pepper and salt to taste;
    • Bay leaf;
    • water - 800 g.

Instructions

Step 1

Sort dry beans thoroughly. Remove all kinds of debris, damaged and low-quality fruits. Fill with water and rinse the beans thoroughly by hand, changing the water several times.

Step 2

Soak the sorted beans overnight in a large bowl of cold water. In the morning, drain the water, put the beans in a saucepan, cover with clean water and put on fire. After boiling, boil for another 20 minutes.

Step 3

Drain and re-fill the beans with clean, cold water. Bring to a boil and place the bay leaf in a container. Then, for about 1, 5-2 hours, cook over low heat until the beans are soft.

Step 4

Drain the water again, remove the bay leaf, and use a food processor or blender to puree ¾ part of the cooked beans. If necessary, a little water can be added to the mass.

Step 5

Heat the olive oil in a large saucepan and saute the finely chopped onions, celery and carrots in it over low heat for 5 minutes. Add peeled and finely chopped garlic, thyme and tomatoes to the fried vegetables, peeling and dicing. Stir frequently and simmer for 6-8 minutes.

Step 6

Put a pot of water on the fire and bring to a boil. Add whole beans, mashed beans, and steamed vegetables to the boiling water. Mix thoroughly and simmer for 10-15 minutes. Season with salt and pepper to taste.

Step 7

When serving, add some olive oil to each bowl of puree soup.
