Pork liver deserves a place of honor on our table. It is relatively inexpensive, but contains many useful substances, including copper, zinc, calcium, folic acid. It is simply irreplaceable for people with low hemoglobin.
Liver fritters
- pork liver - 0.5 kg;
- egg - 1 pc.;
- carrots (medium) - 1 pc.;
- 1 onion;
- mayonnaise - 1 tablespoon;
- salt pepper;
- flour.
Rinse the liver, scroll in a meat grinder with onions and carrots, add mayonnaise, salt and pepper. Mix the resulting mass and gradually add flour, carefully breaking the lumps. The mass should not be thick, like dough for pancakes. Put the pancakes in a frying pan preheated with butter with a tablespoon and fry on both sides under the lid. If you bake small pancakes instead of pancakes, you can make a liver cake. To do this, grease the pancakes with mayonnaise, and for the layer, fried carrots (grated on a coarse grater) with onions are suitable.
Pork liver gravy
This dish is universal and will suit almost any side dish as a gravy: mashed potatoes, pasta, rice, porridge.
- liver - 300 g;
- carrots - 1 pc. medium;
- medium-sized onion - 1 pc.;
- salt pepper;
- wheat flour - 1 tsp;
- mayonnaise - 1 tsp;
- tomato paste (not hot ketchup) - 1 tsp;
- sunflower oil.
Cut the liver into small pieces or strips, carrots into cubes or rub on a coarse grater. Divide the onion into 4 parts and cut each into strips (like a quarter of a ringlet). Heat the oil in a frying pan, put the liver in it. When juice is released from it, add carrots and onions, salt and pepper. After 5-7 minutes, add the flour and gently mix everything, add the pasta, mayonnaise and water, mix again and leave to simmer for 10-20 minutes.
Starch-breaded liver
- pork liver - 0.5 kg;
- egg - 1 pc.;
- potato starch 2-3 tablespoons;
- mineral water with gas - 1 tbsp.;
- salt (preferably fine, such as Extra);
- sunflower oil
This dish is prepared quite quickly and does not require any special expenses. Cut the liver into pieces 1 cm thick, put it in a bowl and leave it in the refrigerator for 4-6 hours (you can overnight), then put it in a colander and let the water drain. At this time, beat the egg with a fork, lightly salting. Pour the starch on an A4 sheet and add some salt. Dip pieces of liver in an egg and immediately roll in starch, put in a frying pan preheated with oil. Fry for 3-4 minutes and turn over. You can cover it with a lid, then the liver will be softer.
Liver chops
- liver - 0.5 kg;
- salt 0.5 tsp;
- egg - 1 pc.;
- flour - 3-4 tablespoons;
- sunflower oil.
Cut the liver into 1 cm thick pieces and beat off on both sides. Beat the egg in a bowl with a pinch of salt. Dip pieces of liver in an egg and immediately roll in flour, put in a frying pan preheated with oil. If the pan is not covered with a lid, the liver will be crispy.
