Step 1

If you have a good piece of beef - sirloin or ribs best - you can make real English roast beef. Wash the meat, peel it of films, dry it with napkins, rub with salt and pepper. If you come across a piece that is too lean, brush it with melted beef tallow. Sprinkle the flour on the meat - then a delicious crispy crust forms on the surface of the roast beef.

Step 2

Place the meat in a low-sided metal dish and place in a preheated oven to 180 degrees. Cooking time depends on the size of the piece. To get a medium roast beef, you need 20 minutes for every 500 grams of meat weight, plus an additional 20 minutes. A kilogram piece will be ready in an hour. While baking, pour the meat juice on the beef every 20 minutes. If there is not enough sauce, add water or broth to the mold.

Step 3

Cover the roast beef with foil 45 minutes before the end of baking and place the dish on the bottom shelf of the oven. Increase heat up to 220 degrees. To make sure the meat is done, pierce the piece with a cooking needle or knife. If clear juice flows out of it, the roast beef is ready. Take it out of the oven and wrap the piece in foil. Let the meat sit for about half an hour. During this time, the meat juices and fat will be evenly distributed in the piece, the roast beef will acquire a delicate taste and will be easier to cut.

Prepare the sauce for the meat. Fry the flour in beef fat, dilute it with broth and the remaining meat juice formed during frying. Boil the mixture for 3-4 minutes and pour it into a gravy boat. Spread the roast beef on platters and pour the sauce generously over them. Serve with vegetables, toast and a glass of porter or red wine.

A not too fatty piece of pork will make an excellent homemade boiled pork. Wash the meat, pat dry with a paper towel. Make punctures on a piece with the edge of a knife, insert the cut garlic cloves into them. Rub the meat with salt and pepper, wrap it in foil and place on a baking sheet.

Step 6

Roast the meat in a preheated oven. A half-kilogram piece is cooked for about 35 minutes. Remove the pork from the oven and cool without removing the foil. Serve cold and cut into thin slices. Serve pickled vegetables, mustard and garlic sauce with the meat. Don't forget a well chilled rosé wine or light beer.
