Potatoes appeared in Russia only three hundred years ago. But now it can be found in almost every housewife. This vegetable is even called "the second bread", as it has become an integral part of Russian cuisine. And the number of dishes prepared from potatoes is several hundred.
Potato casserole
Ingredients:
- potatoes - 700 grams;
- minced meat - 300 grams;
- sour cream - 200 grams;
- cheese (hard) - 50 grams;
- starch (potato) - 1 tablespoon;
- flour (wheat) - 1 tablespoon;
- water - 0.5 cups;
- salt, dried dill, black pepper, garlic cubed, onion - to taste.
Potato casserole with minced meat is warmed up in the microwave, so you do not need to grease the dishes with oil to prepare this dish. Due to the absence of excess fats, the dish turns out to be dietary.
You should choose firm potato tubers with an even color and non-flaky skin. If the vegetable is wrinkled, soft, or has sprouts, chances are it has been stored for too long in the wrong conditions.
To make a dressing for a casserole, you need to mix spices, add starch, flour and sour cream to them. Then it is necessary to add water to these ingredients and bring the resulting mass to homogeneity.
The potatoes should be peeled, rinsed, dried and cut into thin cubes. You need to add one third of the dressing to them and mix so that each piece of vegetable is soaked in sour cream sauce. Place half of the potato sticks in a baking dish and flatten. A second layer of minced meat should be added on top. Then you need to close the casserole with the remaining potatoes and pour generously with sour cream dressing.
You need to put a lid on the form and put the dish in the microwave. Potatoes should be baked for 20 minutes in the microwave at 850 watts. After that, you need to remove the dishes from the oven and check the dish for readiness.
It is important not to overdo the casserole in the microwave: the potatoes should turn out soft and juicy, and not like chips. Cheese must be finely grated and sprinkled on the dish. Next, you should send the dish to the microwave for another 10 minutes.
If the settings of the household appliances allow, it is better to cook potatoes and cheese with the “crisp” function for the last 10 minutes. This will make the casserole rosy.
Soup-puree
Ingredients:
- potatoes - 7-8 medium-sized tubers;
- champignons - 200 grams;
- carrots - 1 piece;
- onion (onion) - 1 head;
- butter - to taste;
- salt, pepper, herbs, spices - to taste.
Puree soups are not so common on the menu. For many, traditional borscht or fish soup is more familiar, into which you can crush bread and eat a bite of lard. However, the puree soup is perfect both as a first course for lunch and as a side dish for meat. This dish has a delicate and mild taste.
To make mashed potatoes, you need to bring the water to a boil, add salt and add chopped potatoes to it. When the vegetable is cooked, it is necessary to drain some of the liquid into a separate bowl. Then beat the potatoes and the remaining water in the pan with a blender to make a creamy mass. The puree should be left to simmer over low heat.
Next, you need to sort out, wash and cut the mushrooms into small pieces. They must be fried in oil in a preheated skillet. After that, grate the carrots and chop the onion into small cubes. These ingredients must also be fried in oil.
Cooked vegetables and mushrooms should be added to the cooking puree. The resulting mass must be diluted with the remains of the potato broth. The soup should be brought to a boil and removed from heat. Then you need to sprinkle the dish with herbs and add a little pepper with spices.
Salad with potatoes and marjoram
Ingredients:
- potatoes - 200 grams;
- marjoram (cut into small pieces) - 1 teaspoon;
- onions (onions) - 150 grams;
- butter, salt, ground black pepper - to taste.
Cut the potatoes and onions into large slices. Place them together on a baking sheet, then sprinkle with marjoram, pepper and salt. Add a small layer of butter on top. Potato salad should be baked in the oven for about 40 minutes at a temperature of 330 ° C.
