People who are lactose intolerant are forced to give up the use of pastries in the form of pies, cakes and cookies, which are made using milk. In this case, they should buy baked goods that contain soy analogs of dairy products - for example, soy milk, soy yogurt or bean curd, which are in no way inferior to classic dairy products. So, soy milk, which is a snow-white creamy drink with a pleasant taste and smell, is perfect for replacing cow's milk in baked goods.

Whole fresh baking milk can be easily substituted with rice, potato, vegetable, coconut, nut milk, and even water (if allowed by the recipe). If desired, traditional milk can be substituted with home-made almond milk. To make it, you will need one glass of raw almonds, ½ teaspoon of sea salt, three glasses of boiled water and cheesecloth. Peeled almonds should be soaked overnight in a sufficient amount of water with sea salt, in the morning, rinse and grind in a blender, adding three glasses of water there. The resulting mixture must be filtered through cheesecloth to remove fibers and refrigerate. Prepared almond milk can be used for baking right away or consumed as needed by keeping it in the refrigerator.
