Dumplings are made either from simple dough or with a variety of fillings. They are boiled in broth or water. It is best to serve the dumplings separately with soup or broth in portioned bowls. This will prevent them from getting wet in a common pot, making the broth or soup cloudy and unsightly.

Instructions
Step 1
Meat dumplings.
Chop two onions finely and sauté them in a saucepan. Pour in 1 glass of broth, salt and pepper. Boil for 2 minutes. Add 1 cup flour, stir with a whisk. Boil until thick and turn off heat. Add 2 raw eggs, chopped roast meats or ham and toss. Boil water in a saucepan, salt it. Put the prepared mass into boiling water with a dessert spoon. Boil the dumplings for 5 minutes and place on plates with a slotted spoon. Pour in hot broth with herbs.
Step 2
Semolina dumplings.
In a bowl, grind 2 tablespoons of butter and 2 eggs. Add 4 tbsp. tablespoons of flour and 2 tbsp. spoons of semolina. Stir well. Let the dough stand for 30 minutes to allow the flour and semolina to swell. Put the dumplings in boiling salted water with a teaspoon. The finished dumplings float to the surface. Drain the water, put the dumplings in bowls, and pour over the prepared soup.
Step 3
Cheese dumplings
Mash 50 g butter with 2 egg yolks until fluffy. Pour in 50 g flour, 100 g grated hard cheese. Whisk the whites separately and add to the thick mixture. Boil the dumplings in salted water and serve the cheese dumplings with broth.
Step 4
Simple dumplings
Beat one egg in a mixer. Add 20 g of butter, 100 g of broth or milk, 100 g of flour to it, salt. Whisk again. Dip the dough into the boiling broth with a teaspoon. For milk or berry soup, add granulated sugar to the dumplings.
Step 5
Custard dumplings.
Heat ½ cup of water in a saucepan, put 25 g of butter in it. Boil and immediately move the saucepan to an adjacent burner. Mix 3 tablespoons in a bowl. tablespoons of flour and 2 tbsp. tablespoons of semolina, salt on the tip of a knife. Add dry ingredients to hot water in one fell swoop and stir quickly. Put on low heat, stirring constantly with a spoon, until the dough is easy to separate from the sides of the saucepan. Beat 1 egg into the slightly cooled dough, stir and cool the custard mass.
