In traditional Ukrainian cuisine, there is such a delicious dish as soup with dumplings. This dish is quite quick and easy to prepare, and besides, it has a special taste and wonderful aroma. Dumplings in some regions are called dumplings. They are pieces of text that have an egg base, boiled in water or broth.
The origin of dumplings
There are several versions of the origin of dumplings. Ukrainian housewives know their secrets of cooking this dish, while Poltava is called the birthplace of dumplings. There are analogues of this dish in other countries: in the Czech Republic, it is dumplings, in Italy - gnocchi, and in Poland - dumplings.
Chicken soup with dumplings
You will need:
- chicken leg - 200 g;
- potatoes - 3 pcs.;
- vegetable oil - 2 tbsp. l.;
- butter - 30 g;
- bay leaves - 2 pcs.;
- onions - 1 pc.;
- carrots - 1 pc.;
- chicken egg - 2 pcs.;
- wheat flour - 7 tbsp. l.;
- garlic - 1 clove;
- milk - 2 tbsp. l.;
- water -2.5 l.;
- greens - optional;
- salt, pepper - to taste.
Dip the chicken legs in cold water and cook over low heat for 45-60 minutes. After the broth has boiled, constantly skim off the resulting foam. Don't forget to add pepper and bay leaves at the end of cooking.
In the meantime, peel the vegetables: wash the potatoes, peel and cut into cubes, wash, peel and grate the carrots. Boil potatoes and carrots for 7-10 minutes.
Peel and chop the onions. Heat vegetable oil in a skillet and fry the onion until golden brown. Add butter at the very end of frying. This is done to give the onion a creamy flavor.
While the vegetables for the soup are boiling, prepare the dumplings dough. In a deep bowl, combine 2 eggs, milk, salt and pepper, and then whisk the mixture. In the meantime, sift the flour, peel the garlic and chop with a garlic press. Combine these ingredients in the dough. Remember that the dough should not be tight.
Form small pieces of dough and send them to the soup. It is best to make dumplings small, since they will noticeably swell during cooking. It is necessary to cook the soup until the dumplings are ready. This takes about 5-10 minutes.
Serve hot chicken soup with dumplings. Do not forget to sprinkle it with herbs.
