Many people love poultry meat, but it so happened that mostly chicken decorates our table. You can diversify your menu by cooking a duck with apples. This seemingly complex dish does not require any special culinary talents from you.

Instructions
Step 1
If the duck is frozen, it must be thawed before cooking. Wash the bird carcass and pat dry with a paper towel.
Step 2
Using a fine grater, scrub the zest from the lemon and orange, and the rind from the apple. Place the zest in a deep plate and set aside the fruit.
Step 3
Chop 3 garlic cloves and chop the herbs. Add greens and garlic to the zest, pour 3 tablespoons of vegetable oil there, add salt, pepper and all the spices. Stir the mixture thoroughly. Add the juice of half a lemon and let sit for 20 minutes, then stir again.
Step 4
Thoroughly coat the duck with a mixture of zest and spices, both outside and inside. Cut the apples into 4 pieces and place them inside the duck. Chop 3 cloves of garlic and place it inside the duck as well. Wrap the duck in plastic wrap or a bag and put it in the refrigerator for 2-3 hours.
Step 5
The oven needs to be preheated to 180 degrees. Place the duck on a baking sheet and place in the oven for 1.5-2 hours. A lot of fat will come out of the duck during cooking. Every 15-20 minutes it is necessary to take out the duck and water it with the released fat, thanks to which the crust of the duck will be roasted and crispy.
Step 6
The potatoes must be peeled and cut into large pieces. Place the potatoes on a baking sheet 30 minutes after you start cooking the duck. By this time, the bird will already have enough juice, and the potatoes will have time to fry. Place lemon and orange wedges on the duck platter before serving.
