If you decide to create such a Mexican dish, prepare the following ingredients: 1/2 cup vegetable oil, 1 turkey, 1 onion, and 2 garlic cloves.

It is advisable that the weight of the selected turkey is at least 4 kg.

But for the sauce you will need a lot more products: 6 chili "mulatto" and "ancho" without seeds, 4 chili "pasilla", 3 glasses of warm water, 130 g of peeled almonds, a glass of roasted peanuts, 5 tbsp. l. sesame seeds, 100 g of boiled rice, 50 g of chopped dark chocolate. Half a glass of seedless raisins, 3 wheat tortillas, 500 g tomatoes, 2 cloves of garlic, 3 onions, 2 pcs. cloves, 1 tsp aniseed coriander seed; and salt to taste. A small amount of beans may be required.

Take a skillet with a fairly thick bottom and heat the vegetable oil on it. Rinse the turkey well and cut into small portions. Place the poultry in a skillet and fry until browned. Add vegetable oil as needed. Then transfer the cooked cuts of meat to a roaster or ovenproof pot. Put peeled and chopped onions and garlic there, and then fill everything with water. Simmer the turkey for about 60 minutes over low heat until soft. After the specified time has elapsed, remove the turkey, and pour the broth into another bowl.

These days, turkey mole poblano is made mainly for Christmas. On other days, Mexicans prefer to use chicken.

Chop the chili finely and place in a bowl of warm water for half an hour. Be sure to stir the chili several times during these 30 minutes. In a food processor or mixer, combine chopped peanuts and almonds, sesame and aniseed, cloves and coriander. Then transfer the resulting mixture to a deep bowl. Now, in a mixer, you need to mix onions, garlic, peeled and chopped tomatoes, tortillas, raisins and chili. Mix these ingredients until a homogeneous thick paste is formed. Then put the pasta in a bowl and toss it with the grated nuts and spices. Fry everything in vegetable oil. Frying time is about 10 minutes.

Place the toasted mixture in a thick-walled saucepan, top with the turkey broth and grated dark chocolate. Season with salt and simmer until the sauce looks like thick sour cream. Then place the turkey chunks in a saucepan and stir in the sauce. At the same time, he must completely cover the bird. Place the lid on the pan and simmer for another 15 minutes. Now place the stewed turkey on a large platter and top with the flavored sauce. Fry the remaining sesame seeds over low heat and sprinkle them over the finished dish. Serve the mole poblano stew with rice and beans. It is also recommended to put some Christmas salad leaves to decorate the turkey.
