"Burito", "burrito", "burritos" is the name of a traditional Mexican dish. Buritos is a soft tortilla that is wrapped in a variety of fillings.
The history of the appearance of buritos in Mexican
Surprisingly, the dish considered to be truly Mexican is actually of European origin. Buritos got to Mexico thanks to the Spanish conquest. Back in the Middle Ages, meat rolls stuffed with sauerkraut were sold in the squares of Spain. The dish was called shavaruma. By the way, these rolls became the progenitors of the famous Asian shawarma.
After settling America with immigrants from European countries, local tribes quickly became acquainted with culinary traditions alien to their culture. Some of the dishes were so liked by the Indians that they adopted the methods of their preparation, adapting to their own tastes. This is how the Mexican-style burritos recipe appeared.
At first, a mixture of corn flour, national elements of the Aztec cuisine and shawaruma was called "gringos". About 100 years ago, Americans became interested in the dish and, having slightly changed the recipe, gave the product a new name - "buritos".
There is also a legend about the origin of the dish. 100 years ago, Mexicans began migrating to nearby American lands, mostly settling in Texas. The border between Texas and Mexico is the Rio Bravo River. It is a narrow river with an incredibly strong current and very slippery pebbles, which makes wading incredibly difficult.
On the Mexican coast lived an old man, Juan Mendoza, who cooked delicious dishes. He soon became famous on both sides of the river. The Americans were happy to order national Mexican dishes from the old man. However, the delivery of food in clay pots often ended sadly. So Juan Mendoza started wrapping the cooked food in flat cakes. Thus, the Mexican Buritos appeared. The name "buritos" in translation from Spanish means "donkey". They say that the old man had a donkey that helped the owner in the delivery of orders.
How to cook Mexican burritos
Unfortunately, making a real tortilla in Russia is quite problematic. One of the main components of the tortillas is corn flour. It is difficult to achieve a fine grind with household appliances. Therefore, in Russia, an analogue of burritos is most often prepared using lavash.
To make a real Mexican tortilla, you need the following ingredients: 150 g each of corn and wheat flour, 200 ml of water, 50 g of butter and a pinch of salt.
Wheat and corn flour are mixed with salt. Hot water is added to the ingredients. The butter is melted in a water bath and is also added to the flour. Knead the dough thoroughly, wrap it in foil and leave it alone for half an hour.
The dough is formed into balls of equal size, which are rolled into thin circles with a diameter of about 20 cm. Tortillas are baked in a preheated pan without using fats.
Buritos fillings are very diverse. It can be salads, beans, minced meat with the addition of herbs and spices. Almost every housewife in Mexico has her own family recipe. It is not without reason that burritos is considered a creative dish.
Example of filling: 500 g ground beef, 400 g sauteed beans, a bunch of lettuce, 3-4 large tomatoes, a bunch of green onions, a head of onion, 2 teaspoons of chili powder, 200 g of cheddar cheese, a teaspoon of cumin, black pepper, salt.
Finely chopped onions are fried in vegetable oil. All spices are mixed by adding a little water to form a paste. The paste is poured into fried onions. Then, when the water has evaporated, minced meat is added to the onion and the ingredients are continued to fry.
When the minced meat is ready, add beans, finely chopped tomatoes, onions and lettuce to it. The ingredients continue to simmer for a few minutes. The finished filling is wrapped in flat cakes.
