  • For pumpkin rice porridge:
  • - 200 g of rice;
  • - 2 glasses of milk;
  • - 300 g pumpkin;
  • - 2 tbsp. l. Sahara.
  • For pumpkin cutlets:
  • - 500 g pumpkin;
  • - 3 eggs;
  • - ½ glass of sour cream;
  • - 1 tbsp. l. semolina;
  • - 1 tbsp. l. Sahara;
  • - 1 tbsp. l. bread crumbs;
  • - vegetable oil.
  • For pumpkin cookies:
  • - 2 cups of flour;
  • - 1 glass of grated pumpkin;
  • - 4 tbsp. l. butter;
  • - 1 egg;
  • - 1 egg yolk;
  • - ½ glass of sugar;
  • - ½ tsp. soda.

Instructions

Step 1

Semolina soup with pumpkin

Wash pumpkin and carrots, peel and cut into small cubes. Then put in a frying pan, add butter, pour in a little water and simmer under the lid until cooked over medium heat. Then mash with a spoon or wooden pestle until puree and mix with ground cinnamon. Pour milk into a saucepan, put on a low heat, bring to a boil and add semolina. Simmer the semolina for 10 minutes, then add the cooked pumpkin-carrot puree, salt and sugar. Mix carefully and cook for 5-7 minutes. Serve semolina soup with pumpkin to the table, season with cream.

Rice porridge with pumpkin

Go through and rinse the rice. Then fill it with half a liter of boiling water and cook over low heat for 15 minutes. Wash the pumpkin under running water, peel and cut the flesh into small cubes. After that, sprinkle the prepared pumpkin with sugar and soak for 10 minutes. Bring the milk to a boil and remove from heat. When the pumpkin has juiced, add it along with the hot milk to the rice. Mix everything well and cook for another 15 minutes over low heat. Before serving, season the rice porridge with pumpkin with butter.

Pumpkin cutlets

Grate the pumpkin pulp without the skin on a grater and squeeze the juice lightly. Then add sour cream to the squeezed pumpkin mass and simmer under the lid for 5 minutes until tender. Place semolina, granulated sugar and 3 egg yolks in the hot mixture. Stir everything and form small patties, about the size of a teaspoon, in the form of round sticks or "cigarettes". Dip cooked pumpkin patties in pre-beaten egg whites and roll in breadcrumbs. Fry in hot vegetable oil. Serve pumpkin cutlets with jam, jam or honey.

Wash the pumpkin, peel and grate the pulp on a fine grater. Then, combine the sifted wheat flour with softened butter and grated pumpkin. Add egg, egg yolk, granulated sugar and baking soda. Mix everything thoroughly and knead the dough. Roll it into a layer about 4-8 millimeters thick. Transfer to a baking sheet and bake in the oven at 220 ° C for 15 minutes. Then take it out and, without cooling, cut the layer into squares and rhombuses.
