For dessert, use aromatic sweet and sour apples - for example, Antonovka.

Wash, peel and core the apples. Cut the fruit into pieces and place in a saucepan. Add 4 tablespoons of water and lemon juice. Simmer apples, covered, for 15-20 minutes. Add raisins to a saucepan, stir and remove from heat.

Bring 450 ml of cream to a boil with a cinnamon stick. Remove the cream from the heat and leave to cool. Remove the cinnamon after 10 minutes. Beat the yolks with sugar into a fluffy light mass, then pour 150 ml of cream into the mixture, beat again. Add the yolk mixture to the remaining cream and cook for 15 minutes until thickened.

Place the apple-raisin mixture in fireproof tins and pour the cream over it. Refrigerate. Sprinkle sugar on the cream and place the molds on a hot grill for 2-3 minutes. The sugar should melt, forming a brown crust. Place the molds in the refrigerator for 1 hour.

Dumplings stuffed with apples

You will need:

- 200 g of apples;

- 300 g flour;

- 3 eggs;

- 1, 5 glasses of milk;

- 1 cup of sugar;

- 1 glass of sour cream;

- salt to taste.

Apple dumplings can be made from wheat or buckwheat flour.

Whisk the eggs and salt into a lather. Add the pre-sifted flour in portions, stirring vigorously with a spoon, so that it becomes as airy as possible. Peel the apples, remove the core, grate the fruits on a coarse grater. Combine the grated apples with the dough and stir until smooth.

Boil salted water. Using two spoons moistened with water, take a small part of the dough and put it in boiling water. Make sure that the products do not stick to the bottom and sides of the pot. When the dumplings come up, cook them for a couple more minutes, catch them with a slotted spoon and put them on a dish. Whip the sour cream with sugar, pour over the dumplings with the resulting sauce and serve.

Apple jelly

Try making a simple but healthy dessert - apple jelly. It is ideal for baby or diet food. Serve chilled with cold milk.

You will need:

- 600 g of apples;

- 1.5 liters of water;

- 1, 5 glasses of sugar;

- 2 tablespoons of starch.

Peel the apples, cut into quarters and core. Put the fruits in a saucepan, cover them with a little water and simmer until soft over low heat. Rub the apples through a sieve or beat with a mixer, add sugar and water. Bring the mixture to a boil.

Stir the starch with a little water, pour it into a saucepan with the apple mixture. While stirring, bring the jelly to a boil. Cool it down and pour it into glasses or bowls.
