This delicacy salmon dish will be extremely appropriate for the New Year and Christmas holidays. If, after celebrating the new year, you have some champagne left, you can use it to make a spicy sauce and taste the fish in a new and original interpretation.

- - 1 kg salmon fillet
- - 1-2 lemons
- - 200 g of white wine
- - 100 g soy sauce
- - 50 g dill
- - 30 g thyme
- - 100 g butter
- For the sauce:
- - 150 g of champagne
- - 300 g cream 33%
- - ground pepper, salt

Step 1
To prepare the dish, you will need fresh, not frozen fish - this is one of the main conditions of the recipe. The taste and aroma of the finished dish directly depends on the quality of the fish.
Prepare fillet pieces. Cut the lemons into thick rings and place on the bottom of a special baking dish.
Step 2
Put herbs on top of the lemon slices. It can be not only dill and thyme, but also various combinations of herbs according to preference, for example, rosemary, basil, parsley, etc. Pour wine and soy sauce onto a baking sheet.
Step 3
Place the salmon fillet on a pillow of lemons and herbs. Season the fish with salt and pepper, put pieces of butter on top.
Step 4
Send a baking sheet with salmon to an oven preheated to 180 degrees for 15 minutes. Get ready-made fish without overexposing it in time - that is how many minutes it takes for the salmon to turn out to be especially tender and aromatic.
Step 5
Prepare a creamy sauce. Pour 150 g of champagne into a suitable bowl and put on fire. Evaporate the champagne by 1/3, then salt and add ground pepper. Simmer for about 5 minutes more with continuous stirring.

Put the finished fish on a plate, garnish with fresh herbs and serve with a creamy sauce.
