Champ is a traditional Irish dish. There are three options for its preparation - classic, with cabbage and rutabaga.
It is necessary
- - 1 kg of potatoes
- - 70 g butter
- - 200 ml of milk
- - green onions
- - salt
- - ground black pepper
Instructions
Step 1
Boil the potatoes in lightly salted water until tender. First, the root vegetables must be peeled and cut in half.
Step 2
Boil milk in a separate container. Chop green onions with a knife and add to milk. Boil the mixture until the onion becomes soft. It is better to stir the contents of the saucepan constantly so that the milk does not boil over and burn.
Step 3
Drain all the liquid from the boiled potatoes. Return the saucepan to the heat and wait until all moisture has completely evaporated. At the same time, it is better to mix the potatoes several times.
Step 4
Make mashed potatoes and milk with onions. Add salt and black pepper as you like.
Step 5
According to the Irish tradition, champ is served on the table in small portions with a meat side dish. In hot mashed potatoes, make a small depression and put a piece of butter in it. When a yellowish funnel forms, the dish can be offered to guests.
Step 6
There are two more varieties of champ. The first option - chopped potatoes with boiled cabbage, mixed with boiled milk and green onions. The second recipe - cabbage is replaced with boiled rutabagas. The principle of serving with the use of original butter decoration always remains unchanged.
