Mushrooms must first be soaked in cold water, and then rinsed in running water. Mushrooms are boiled for an average of 30 minutes. All recipes are for 6 servings.

Bean soup

You will need: 350 g of porcini mushrooms, 200 g of green beans, onion, bay leaf, 3 potatoes, 1 carrot, a can of canned beans (preferably red), parsley root, vegetable oil, water, salt.

Cut the washed mushrooms, pour 2 liters of water, salt and cook, periodically skimming off the foam. Peel, chop and sauté onion and parsley root. The onion should not be overcooked. Add carrots grated on a coarse grater. Send the cooked sauté, sliced potatoes and green beans to a saucepan with mushrooms. Cook until vegetables are tender. Then add canned beans without liquid and bay leaves. After boiling, remove from heat and let it brew for 10-15 minutes.

Soup "Delicate"

Ingredients: 0.5 kg of chanterelles, onion, 1 carrot, 2 tbsp. spoons of rice, butter, water, salt, peppercorns, a little dill.

Cut large chanterelles. Pour mushrooms with 1.5 liters of water, salt, add 2-3 peppercorns and cook for 10-15 minutes, removing the foam. Throw the mushrooms into a colander, strain the broth and add rice to it. Put the saucepan on the fire. Finely chopped onion and grated carrots on a coarse grater are sautéed in butter and sent to the boiling broth. Add zucchini and boiled chanterelles. We bring it to readiness. Sprinkle with finely chopped dill when serving.

Mushroom cabbage soup

You will need: 0.5 kg of mushrooms, onion, carrots, 250 g of cabbage, 2 medium potatoes, eggplant, tomato, salt, pepper, bay leaf, water, butter.

Wash, peel and cut the vegetables into cubes. Fry pieces of eggplant in butter. Chop the mushrooms. Chop the cabbage. Combine all ingredients, stir, arrange in pots. Salt and pepper. Place 1 bay leaf in each pot. Pour in water, close the lids and send to an oven preheated to 180 degrees for 1 hour. Best served with sour cream and herbs.

Mushroom stew

Ingredients: 0.5 kg of mushrooms, 2 onions, a clove of garlic, fresh herbs, hot red pepper, 1 tbsp. a spoonful of corn flour, salt, 2 tbsp. tablespoons of vegetable oil, salt, a little ground walnuts.

Chop the mushrooms, pour 1, 5 liters of water, salt and cook until tender. Then discard in a colander and cut into strips. Saute the onions in a saucepan, add mushrooms, flour and pour in the broth remaining from the mushrooms. We are waiting for a boil, cook for 15 minutes, add chopped garlic, season with hot pepper to taste. Let it brew for 5 minutes. When serving, sprinkle with chopped herbs and nuts.
