Homemade mayonnaise with capers is easy to prepare if you have a wonderful assistant in your kitchen - a blender. It will turn out to be healthier and tastier than store-bought mayonnaise. Thanks to the quail eggs, it turns out to be very tender.

It is necessary

  • - 150 ml of vegetable oil;
  • - 6 quail eggs;
  • - 1 teaspoon of mustard, lemon juice, capers;
  • - a pinch of salt, ground pepper, sugar.

Instructions

Step 1

Put salt and sugar, a mixture of ground peppers, dry mustard in a blender bowl. Drive six quail eggs into the same place. Mix until smooth. You will get a yellow fragrant mass.

Step 2

Add half a teaspoon of vegetable oil to the future mayonnaise, stirring the mixture for several seconds after each spoon. Increase the dose of vegetable oil gradually. The mixture should begin to thicken. In this way, pour in the indicated amount of oil.

Step 3

At the end, pour in lemon juice (always freshly squeezed). Mix everything with a blender, add the capers and mix again until smooth. Instead of capers, you can add something else, for example, a very interesting mayonnaise will turn out with pickles, it will resemble a tartar sauce.

Step 4

Homemade mayonnaise with capers is ready, pour it into a clean jar and refrigerate. Store it this way for no more than one week. After cooking, the mayonnaise is immediately ready for use - it can be seasoned with various vegetable salads, served with meat dishes as a sauce, decorated with stuffed snacks, or simply spread on bread.
