Great Lent is approaching, which will last 40 days and will end with the onset of Orthodox Easter. The main meaning of fasting is the purification of the soul through the purification of the body, but this is not a reason to give up delicious and varied dishes, as well as seasonings and sauces.
It is necessary
- - large white beans (boiled) - 1, 5 cups;
- - water - 100 ml;
- - vegetable oil - 100 ml;
- - salt, sugar, black pepper - to taste;
- - lemon juice or soy sauce - 2-3 tsp

Step 1
For the preparation of mayonnaise, take pre-boiled large white beans, such as Baby Lima. It is this variety that has a delicate creamy taste. Do not use red, black or variegated beans for making mayonnaise, as mayonnaise should not be colored. Place the prepared beans in a tall, narrow container, such as a liter jar or special glass, which may be sold with the hand blender.
Step 2
Pour boiled water at room temperature here. Now put sugar, salt, black pepper. Here, be guided by your taste. Add lemon juice or quality soy sauce. Wipe everything together with a blender until a smooth paste.
Step 3
Beat the resulting mixture, gradually adding oil. Vegetable oil is best to take the most common sunflower oil. Of course, fragrant unrefined and non-deodorized. This will give the mayonnaise its special flavor. Try the sauce and add more sugar, salt, pepper, or lemon juice (or soy sauce, if using) as needed. Whisk the sauce again.
Step 4
Homemade lean mayonnaise is ready. It can be served with main courses as a sauce or topped salads, which are usually accompanied by mayonnaise.
