A thick, aromatic sauce made with ripe tomatoes is a great alternative to store-bought ketchup. When cooked correctly, tomato sauce keeps well throughout the winter and also has a good consistency and great taste.
Ingredients for making tomato sauce
- 3 kg of ripe soft tomatoes (red);
- 5 pods of sweet pepper;
- 1-2 medium heads of garlic;
- 1, 5 tablespoons of vinegar 9%;
- 2 tablespoons of salt;
- 1, 5 glasses of sugar;
- 1/4 teaspoon of hot ground pepper.
Cooking tomato sauce for the winter
1. Wash and dry vegetables (peppers and tomatoes) on a towel.
2. Cut the pepper in half, remove the seeds and stalk and cut it in half again.
3. Cut the tomatoes into 2-4 pieces.
4. Next, you need to grind everything in a convenient way. You can put all the vegetables in a blender, or mince them.
5. Peel the garlic, chop it and add to other vegetables.
6. For cooking the sauce, you need to choose a deep saucepan or basin. Put all the chopped ingredients in a suitable bowl, add sugar and salt, mix.
7. Boil the sauce, then reduce heat and cook, stirring occasionally, for 40-60 minutes, until the desired consistency. Sometimes it takes 1.5 hours if the sauce is too runny.
8. At the end of the sauce, add pepper and vinegar and stir.
9. Pour the prepared sauce into small sterile jars and twist, or roll up with sterile iron lids.
10. This tomato sauce should be kept cool, preferably in the refrigerator.
