In addition, viburnum berries contain a large amount of organic acids, which turn the berries into a natural antiseptic.

Kalina contains vitamins A, B1, B2, E, PP and carotene. The berries contain such substances as: pectin, tannin, coumarins, resinous esters, viburnin glycoside (it is he who makes the berries bitter). And minerals necessary for every person: sodium, potassium, calcium, magnesium, phosphorus and iron.

Also, viburnum berries are used as a means of cleansing and renewing blood and normalize the work of the heart. And retinol, which is part of these berries, promotes active cell regeneration, reduces the number of wrinkles, relieves swelling, smoothes and restores skin elasticity.

But, like many products, viburnum has its own contraindications. It is not recommended to use it for hypotonic patients, as it lowers blood pressure. Still, you should not get carried away with viburnum for those who have increased acidity of gastric juice, and for people with gout and a tendency to form blood clots. Ingredients:

  • milk - 250 ml.;
  • eggs - 2 pcs.;
  • butter - 80 grams;
  • fresh yeast - 30 grams;
  • granulated sugar - 7 tbsp. l.;
  • salt - 1/2 tbsp. l.
  • flour - 500-600 grams;
  • vegetable oil - 2 tbsp. l.
  • viburnum - 400 grams;
  • big apple - 1 pc.;
  • water - 50 ml.

Cooking method:

  1. To prepare the dough, heat the milk and pour into a deep bowl. Add fresh yeast (can be replaced with dry yeast if desired) and mix thoroughly to dissolve the yeast well. Then add salt and 2 tablespoons of sugar and some flour. Mix well (the consistency should turn out to be liquid, like on pancakes). Then set the bowl aside.
  2. In a small bowl, beat 1 egg, add melted butter (can be replaced with margarine) and add a little flour, while mixing everything thoroughly. Then pour the contents of the plate into a bowl of milk and yeast. Stir well and add the remaining flour and knead the place. Add vegetable oil at the end to prevent the dough from sticking to your hands. Cover the kneaded dough with a napkin or towel and leave to rise in the heat for 40 minutes.
  3. Divide the finished dough into two parts. Place one portion in a greased baking dish and place in a warm place for 30 minutes to rise.
  4. For the filling, rinse the viburnum first, separate the berries from the twigs. Place in a saucepan and add 50 ml of water. Cook for 3-4 minutes. Then rub the viburnum through a metal sieve and get rid of the seeds, since the seeds in the berries of the viburnum are large enough
  5. Boil the resulting viburnum puree for 15 minutes. Then add 5 tablespoons of granulated sugar and a peeled grated apple. Cook for 20 minutes until thickened. Place the cooled filling in the dough pan.

  • starch 1-2 tsp;
  • icing sugar - 2 tbsp. l.

Cooking method:

  1. Put the viburnum berries in a bowl with a thick bottom and add a little water. Put the viburnum in the oven for 4 hours, preheating it to 120 degrees.
  2. Cut the cold butter into small cubes, mix with flour, salt and sugar and grind until crumbly. In a glass, beat the yolk with water and add it gradually to the flour mixture, being careful not to mix too much. The dough should be soft and elastic. As soon as the dough begins to become homogeneous, and not crumble, mold it into a ball, divide it into two parts: the main part and to decorate the cake. Wrap them in cling film and refrigerate for 30-40 minutes.
  3. Remove most of the shortcrust pastry from the refrigerator, dust the board with flour and roll out the dough in an even layer so that its edges are 5 cm larger in diameter than the form in which you will bake the cake. Then gently roll the dough onto a rolling pin and unfold it on the mold. Trim off excess dough edges and refrigerate for another 20 minutes.
  4. Remove the second slice of dough from the refrigerator, roll it out and cut into strips to decorate the pie.
  5. Sprinkle the bottom of the mold with shortbread dough with starch and a little powdered sugar so that the juice flowing from the berries is absorbed. Carefully lay out the viburnum filling, sprinkling with powdered sugar in layers. Garnish with a wire rack and brush over the dough with beaten egg yolk. Then place in the oven and bake at 180 ° C for 30–40 minutes.
