If you have never tried carrot baked goods, then you are losing a lot - it is easy to prepare, does not require large expenses, has a pleasant taste and aroma, and looks appetizing. Traditionally, ground cinnamon and chopped walnuts are added to carrot dough.

- For the test:
- - 450 g of raw carrots;
- - 320 g of wheat flour;
- - 200 g brown or regular sugar;
- - 150 g odorless sunflower oil;
- - 1 cup coarsely chopped walnuts;
- - 3 eggs;
- - 2 teaspoons of ground cinnamon;
- - 1 teaspoon of baking soda and baking powder;
- - 1 teaspoon of vanilla sugar.
- For the cream:
- - 300 g of curd cheese;
- - 70 g of fine sugar or icing sugar.
- For decoration:
- - halves of walnuts.

Step 1
Rinse carrots thoroughly, peel and grate on a fine grater. Place eggs and granulated sugar in a deep bowl, beat the mass for 3 minutes at low speed using a mixer or blender with a whisk attachment.

Add sunflower oil and beat a little more. In a separate bowl, stir in sifted wheat flour, baking soda, ground cinnamon, baking powder, and vanilla sugar. Stir all of the bulk ingredients into the egg mass.

Add grated carrots and walnuts into the dough, mix. Preheat the oven to 180 ° C. Brush a round baking dish with vegetable oil. Pour the carrot dough into the prepared mold.
Step 4
Place the dough pan in the hot oven and bake for 50 minutes. At this time, prepare the cheese cream: stir the curd cheese and powdered sugar using a mixer at slow speeds. Keep the mass in the refrigerator.
Step 5
Remove the finished crust from the oven (you can check the readiness by piercing the dough with a toothpick). Let it cool completely, then cut lengthwise into 2 cakes. Coat the halves with cream, grease the top with cream too. Garnish with walnuts.
