It is necessary

    • For a Finnish New Year's vinaigrette:
    • 4 potatoes;
    • 4 carrots;
    • 4 small beets;
    • 1 head of onion;
    • 4 medium pickled cucumbers;
    • 3 eggs;
    • 400 g of pickled herring fillets;
    • salt;
    • pepper.
    • For the sauce:
    • 200 ml of 10% cream;
    • 1, 5 tsp vinegar;
    • 2 tsp Sahara;
    • beet broth.
    • For the jellied crab salad:
    • 1 tbsp gelatin;
    • 2-3 glasses of fish broth;
    • 200 g canned crabs;
    • 8-10 gherkins;
    • 2 eggs;
    • 1 potato;
    • 1 carrot;
    • salt;
    • pepper;
    • parsley;
    • For baskets:
    • 2 cups wheat flour;
    • 150 g butter;
    • 1 tbsp sour cream;
    • 1 egg;
    • 1 tsp Sahara;
    • salt;
    • cooking oil for greasing forms.
    • For Spanish New Year's Eve Salad:
    • 12 raw peeled tiger prawns;
    • 6 tablespoons olive oil
    • 3 cloves of garlic;
    • salt;
    • pepper;
    • 2 pods of green sweet pepper;
    • 6 tomatoes;
    • 400 g shell pasta;
    • ½ lemon juice;
    • ground red pepper.

Instructions

Step 1

Finnish New Year's vinaigrette

Wash and peel potatoes, carrots, beets, boil all vegetables separately from each other, cool and cut into small cubes, do not drain the beet broth. Cut pickles and onions in the same way, into small cubes, mix all the vegetables, salt and pepper. Hard boil the eggs, cut into large, neat slices.

Step 2

Whip the cream, gradually add sugar and vinegar, tint with beet broth. Serve the sauce and herring separately and place the egg slices on top of the vinaigrette.

Step 3

Crab jelly

Cool the butter, mash with sugar, mix the egg and sour cream, whisk lightly, salt, sift the flour, knead the dough. Knead thoroughly, wrap in plastic wrap, leave in a cool place for 1-2 hours. Grease the tins with cooking oil and bake the tartlets until tender.

Step 4

Chop canned crabs, wash and peel potatoes and carrots, boil in salted water, chop parsley. Boil hard-boiled eggs, cut gherkins, carrots, potatoes, eggs into small cubes, gently mix vegetables and eggs, salt and pepper.

Step 5

Soak the gelatin in the cold broth according to the recipe on the gelatin package. Heat the rest of the broth, add soaked gelatin, bring to a boil, cool. Remove the tartlets from the molds, pour 1 centimeter of broth with gelatin into the same molds, wait until the jelly begins to resemble a soft-boiled egg in consistency.

Step 6

Put crabs, parsley, carrots, potatoes, eggs, gherkins on the jelly, fill with broth, cool until solid. Place the jelly in the dough baskets. Keep refrigerated until serving.

Step 7

Spanish New Year's Salad

Wash and dry the shrimps, fry for 3-4 minutes in olive oil, finely chop the garlic, fry with the shrimps for another 1 minute, salt and pepper, stir.

Step 8

Boil water, salt, put pasta in water, cook for 15 minutes less than indicated on the package, discard in a colander, rinse with cold water. Cut the tomatoes into large slices, bell peppers - into strips, mix vegetables with pasta and shrimps, sprinkle with lemon juice, salt, add ground red pepper, stir.
