Usually we dress green salads with traditional sauces - sour cream, butter, mayonnaise … But, you must admit, sometimes you want to diversify the taste of your favorite salad. In some Italian restaurants, salads are seasoned with a spicy brown sauce. I analyzed the taste of such a sauce and tried to determine its composition to prepare at home. As a result, I got an exceptionally tasty, piquant, and most importantly - a healthy dressing sauce from available products, without chemicals and flavors. Sauce for real gourmets!

We will need:

- soy sauce (100 ml);

- a small root of ginger (50-70 gr.);

- sugar (1 tablespoon);

- unrefined olive oil (2 tablespoons);

- lemon (1/3).

1. Squeeze the juice out of 1/3 of the lemon.

2. Wash and peel the ginger root with a potato peeler, rub it on a fine grater, add lemon juice and stir.

3. From the resulting mass, drain and filter the juice into a small saucepan or frying pan - it is convenient to do this with a tablespoon; you can use a strainer.

4. Add soy sauce, olive oil and sugar to the ginger-lemon juice, put the saucepan over low heat. Now the main thing is to avoid boiling, constantly stirring, to evaporate the sauce, bringing its consistency to the state of liquid caramel.

5. After the sauce is ready, pour it into a sauce bowl, chill and refrigerate.

This Italian sauce is perfect with green and vegetable salad. It can also be served with fish or rice. To get a less pungent taste, you can drain the juice from the grated ginger, and mix the cake with soy sauce and sugar, then squeeze and strain. And the leftover ginger juice can be used to make ginger tea or other dishes. Bon Appetit!
