Take 1 kg of beef liver, 1 glass of milk, 3 pcs. onions, 2 tbsp. tablespoons of mustard, 150 g of vegetable oil, 3 tbsp. tablespoons of vinegar, half a teaspoon of black pepper, salt. The ratio of vegetable oil, salt, vinegar, black pepper can be changed to your liking.
Flush the liver, remove films, blood vessels and veins. Soak the liver in milk for 2 hours. Boil it in boiling salted water for 45 minutes. While it's cooking, make the sauce. Pour sunflower oil into a bowl, pour in vinegar, add black pepper, salt. Whisk the mixture with a fork or whisk. Add mustard and beat thoroughly again. Peel the onion, cut into half rings and place in a salad bowl. Pour the prepared sauce over the onion, stir and let stand for 10-15 minutes.
Remove liver from broth and refrigerate. Slice it along the grain. Cut each piece in half already across the fibers so that you get thin petals. The thinner they are, the better they will marinate with the sauce. Place the chopped liver in the onion sauce and stir well. Put the salad bowl in the refrigerator for 2-3 hours (you can overnight). Garnish each serving with finely chopped green onions before serving.

Beef liver in hot and sweet sauce
Cook the beef liver in a hot and sweet sauce. Prepare 0.5 kg of beef liver, 300 g of fresh mushrooms, 200 g of onions, 1 package of Chili ketchup, half of sweet bell pepper, 5 cloves of garlic, 100 g of flour, 100 ml of vegetable oil, sugar, salt, ground black pepper, a little greenery.
Prepare the liver, cut it into small pieces. Beat them off, salt and pepper. Dip the pieces of liver in flour and fry them in a skillet in oil, not overcooking. You need to fry no more than two minutes for each side. While the liver is cooking, peel and cut the onion into half rings. Fry it until golden brown in vegetable oil. Wash and cut the mushrooms into small wedges. Add them to the bow. Peel and cut the bell peppers into half rings, place them with the onions and mushrooms. It should be cooked to medium soft. Then add the finely chopped garlic.
Garlic will add a wonderful flavor to the dish.
Mix everything and cook the mixture for a couple of minutes. Then add the chili ketchup, stir and simmer a little. Pour in some water, add pepper, salt, sugar and fried liver. Simmer under a closed lid over low heat until thickened. This dish can also be made from pork liver. Stewing can be replaced by baking: place the skillet with the liver and sauce in the oven and bake until tender.
