Step 1
Rinse the liver, peel it of films, cut into large pieces, put in a bowl and cover with milk for 1-2 hours.

Place a pot of water on the stove. There should be a little water so that it only covers the liver when it is boiled. Grate half of the nutmeg on a fine grater. After the water boils, add salt, toss in the nutmeg and peppercorns, add the liver. Remove the resulting foam, reduce heat to low, close the lid and let simmer for half an hour.

Throw a bay leaf into a saucepan, turn off the stove after 10 minutes. Leave the liver to sit in the broth for a while.

Cut the onion into half rings. Preheat a skillet, melt the butter, and lightly simmer the onion on it until golden brown. Chop the greens.
